Anthocyanins in food can also come from black rice, purple corn, red cabbage, and black beans\u2014some even higher than in berries.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-anthocyanins-in-fruits-and-berries\">Anthocyanins in fruits and berries <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">When it comes to anthocyanins in food, berries tend to steal the spotlight \u2013 and for good reason. These plant-based pigments are especially concentrated in fruits with deep red, purple, or blue skin. But blueberries and blackberries are not the only plants rich in anthocyanins. Some grapes, cherries, and even black elderberries offer impressive amounts too. Let\u2019s take a closer look at where to find the most anthocyanins in everyday fruits.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-blackberries-are-full-of-anthocyanins\">Blackberries are full of anthocyanins<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Blackberries are naturally rich in anthocyanins, especially the compound cyanidin-3-glucoside. They come in black, red, and white varieties \u2013 and it\u2019s the black mulberries that are especially high in anthocyanins.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a Korean study from 2020, 12 different mulberry cultivars were grown under the same conditions and compared. The variety Iksu had the highest anthocyanin content \u2013 28.6 mg per gram of dried fruit, which equals about 286 mg per 100 grams of fresh berries. The main compound was <em>cyanidin-3-O-glucoside<\/em>, which is also found in blueberries and blackcurrants. Especially wild and deepblue varieties are packed with anthocyanins. Studies show that blueberries can contain up to 400 mg per 100 grams, depending on type and growing conditions [<a href=\"https:\/\/pubs.acs.org\/doi\/10.1021\/jf060300l\" rel=\"nofollow noopener\" target=\"_blank\">5<\/a>]. The dominant compounds are malvidin and delphinidin derivatives, which are well-known for their antioxidant properties. So the deeper the color, the better the berry, when it comes to anthocyanins in blueberries.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-cherries-as-a-source-of-anthocyanins\">Cherries as a source of anthocyanins<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Sour cherries aren\u2019t just delicious \u2013 they are also foods high in anthocyanin. A Croatian study comparing different cherry varieties found big differences. The <em>Obla\u010dinska<\/em> type had the highest level, with 28 mg per 100 grams, while others like <em>Erdy Jubileum<\/em> had as little as 2.7 mg. Most of the content came from just two types of anthocyanins. While cherries don\u2019t match the levels found in berries like blueberries, they\u2019re still a valuable source of antocyanins\u2013 especially in juice, which sometimes had even higher amounts than the fresh fruit.
